Hand-pulled hand-pulled somen noodles from Okamoto Seimen, founded in 1947, are made with great care on the banks of the Yoshino River in Shikoku Saburo, a water blessing of Tokushima Prefecture.
Handa Somen is made in the Handa area using the traditional hand-pulling method that has been used since the Edo period, using high quality water from the Yoshino River system flowing through Tokushima Prefecture and salt from Naruto City, famous for its Uzutio (whirlpool tides).
The unique blend of wheat that gives the noodles their firmness and chewy texture makes for a pleasantly smooth texture.
